- CHESTNUT BLOSSOM HONEY is a deliciously malty tasting tree honey made from the nectar of sweet chestnut trees that bloom in the spring, but it can also have a slightly bitter edge, sometimes reminiscent of the aroma from freshly brewed coffee. Its deep, nutty flavour goes best with cheese, such as pecorino, and pears. The beautiful dark brown colour of this honey takes on a reddish hue in the light.

- RAW HONEY NATURALLY CRYSTALLISES over time. Chestnut honey crystallises slowly after 1-2 years. If yours has crystallised and you prefer it runny, place on a radiator and drape a tea towel over it. Leave it overnight (or longer). The heat will not damage the honey, the important thing is that you don't heat the honey beyond 40 degrees (the hive can get this hot in Summer). If the radiators are very hot then put something like a thin book under the jars. It can take up to 2 days to fully liquify.
